Foss outlines how to avoid fat fines

FoodProductionDaily.com caught up with Foss Product Manger Jens Borg to ask him how the company's analytical tool, MeatMaster, could optimise meat production.

Borg explained that he adapted his medical knowledge to the development of the equipment, which he claims provides accurate information about fat content, weight and foreign object data for every production unit including for frozen and packaged raw material.

He said that the MeatMaster, which is pre-calibrated, measures meat and trimmings at a rate that keeps pace with production for up to 22 tons per hour, while measuring fat content to an accuracy of one per cent or better.

This ensures, continued Borg, the optimal use of raw materials by getting the fat content right all the time as well as improved production efficiency for manufacturers by avoiding out of specification products.
